spotted...

by my mom in the baking aisle at the grocery store, & taste-tested by me, these were definitely a hit (i loved both the peppermint & the classic mint). where have i been? their website says the baking chips have been around since 2003. considering my LOVE for all things andes, i can't believe i've been missing out on them all of these years. although i'm sure all you bakers out there, have some yummy recipes for these little delights (& consider this an open invitation to share), i found them the perfect addition to my cup of hot cocoa... yum!

Hey! I seriously just bought those yesterday and made the best cookies with them--I call them Mojito cookies..use your basic chocolate chip recipe (i'll share mine with you if you want) and substitute the vanilla extract with rum extract and the yummy mint pieces for the chocolate chips. Sooo good!

Okay, so you have to pour a bag of those on top of a pan of brownies about 5 minutes before they are baked all the way. The chips melt and you spread them out a bit. After they are entirely cooled you have one heck of a brownie--and you can do it with the kind you posted about or the original. It sure beats unwrapping all the mints one at a time.

Seriously--my friend made some for our church party on Saturday night and I'd forgotten all about them for a year. Now they are all I can think about.
