always on hand.

there are several meals that i always have on hand... perfect for those days (or weeks) when i don't quite make it to the grocery store. this is one of those meals. growing up my mom used to make it & i think her mom made it, while she was growing up. it's pretty basic but good - why else would the recipe have been passed from generation to generation?

hash

ingredients:
1 lb. ground
1 bag of thawed o'brien potatoes (cubed potatoes with onions & bell peppers, found in the freezer section)
1 or 2 cans of corn

directions:
brown the ground beef in a pan, discarding any grease when finished. after browning the meat add the o'brien potatoes & corn and cook until the potatoes are soft.

best served with lots of ketchup.

My Mom used to make hash for me when I was a little girl. I think hers came out of a can though :-) I would put vinegar on it. Sounds gross? I loved it!

I do a version of this, as well. It's pretty much a tin foil dinner in a casserole dish. Ben calls it 20 Grand casserole... meaning it's what you eat when you make 20 Grand a year.

This is exactly what my mom used to make us at least once a week when I was little. I never grew to really love it and I think it hurt her feelings. Maybe my kids would like it, though...

This is what my dad made my mom on one of their first dates. They went up the canyon, on a double date with their friends Grace and Glade. Dad cooked this over the fire. I STILL love it and make it all the time.

i didn't know that bit of trivia from marty...i just know that mom always made it...i would request it for my birthday dinner...i loved it then and still do...and it's so easy to make..
