so recently i bought a new cookbook. if you know my aversion to cookbooks, you're probably laughing right now. but, it was the new cooking with all things trader joe's. & if your a trader joe's fan, it's a necessity! with so many yummy sounding recipes, i didn't know which to try first, but eventually i settled on the chickety chinese chicken salad. it was easy, delicious & everyone licked their plate (even the little boys).
chickety chinese chicken salad
3 cups cooked chicken cut into bite sized pieces
1/2 cup trader joe's soyaki or veri veri teriyaki (although i think any soy or teriyaki sauce would do the trick)
1/3 cup creamy salted peanut butter
1 tb. toasted sesame oil
1/3 cup water
1/2 of a red bell pepper, sliced into strips
1/2 of a yellow bell pepper, sliced into strips
1 cup of snow peas
2 green onions, chopped
1/2 cup cashews
whisk soyaki (or whatever you choose), peanut butter, sesame oil & water until well blended.
place chicken, vegetables & cashews in a large bowl. ad peanut sauce & stir to coat evenly.
enjoy!
p.s. it made for great leftovers, and i'm not a leftover kinda girl.

I LOVE me some Trader Joe's. We had a ton of them near by in WA but none close here in GA. :( I did drive an hour each way a few months ago to stock up. Oh how I miss Mr. Trader Joe. I would definitely be interested in that cookbook you mentioned.

Oh yum, this looks divine. I am so going to try it.
I will be the odd one out on this. I have issues with mixing peanut butter with my chicken. Call me crazy but I prefer my peanut butter sans meat and vegetables.
I'm just not feeling it but the picture looks good and I love the name!
I'll have to try that! I just downed one of Trader Joe's Pad Thai noodles in a box, and it was quite tasty. I'm sure it can only get better if you actually make the food from scratch!
ummm, sounds good. but everything tastes better when someone else makes it.
