ooey, gooey, chocolatey & chewy? you know if those are the words used to describe something, it's going to be good. i whipped up these bad boys last week & they were gone in just one night. note to self, next time, bake a double the batch.
rocky road cookie sandwiches
1 stick unsalted butter, at room temperature
3/4 cup packed dark brown sugar
1 large egg
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon pure vanilla extract
1 cup plus 2 tablespoons flour
1 cup chocolate chips
1/2 cups chopped pecans (but you could use almonds or cashews too)
10 tablespoons marshmallow cream
1. preheat the oven to 350 degrees.
2. using a mixer, cream the butter & brown sugar until fluffy. beat in the egg. mix in the salt, baking powder and baking soda at a low speed, then mix in the vanilla and flour. stir in the chocolate chips & nuts.
3. drop a rounded spoonful of dough onto a greased cookie sheet. bake until the cookies are golden at the edges and slightly soft in the center, about 12 minutes. transfer the cookies sheets to racks to cool completely.
4. sandwich the cookies with 2 tablespoons marshmallow each.
yum! & maybe on the next go round we will do ice cream instead, for some homemade ice cream sandwiches.

Those look so good. I'm going to send this post to the printer, I've got to make them. What's the deal with unsalted butter? I don't keep that in stock. Do you know...do you just omit the salt?

Holy cow those look so sinfully good- I think I just gained 5 lbs looking at them. My husband, while he would LOVE them, would HATE ME for baking them right now- he is on a very good health streak and is down 7 lbs......so they will have to wait :0( Tear. Question: I have a 50% off coupon right now to use at Joanne's fabric- problem is 90% of the the things in the store are on sale already and the coupon is only good for something not on sale- dirty ploy I tell you. Do you have any good crafts for me to whip up that I could use the coupon for? I mean, I HAVE to use it- it is a sale and I must take advantage......
The look yummy! I might have to try them. I only add the might because I am trying to lose some baby weight, but I could always eat one and send the rest with my husband to work.
Ok, ok I think I just gained ALL seven pounds back already!

I'm printing out these rocky road cookie sandwiches because, really, with all the fudge, cookies, and chocolate covered goodies I ate last month, it was simply not enough ;) I'll be back for more visits.

Did I tell you I caved? Yep, I did. I made them. Well, Jon had a cheat day yesterday- it was not in the plans but he did. SO when he got home from work he said, "Are you going to make those cookies?" HECK YES I AM! They were delicious- my thighs thank you for them.
