just peachy!

we bought these big beautiful peaches at the farmers market yesterday which got me thinking about making peach cobbler. here's the recipe for one of jeff's favorite desserts (although, i have to say, it actually tastes better with peaches of the canned variety!)

2 cans of fruit (drained)
1 stick of butter
2 tsp baking powder
1 ½ cups sugar
¾ cup flour
½ tsp salt
¾ cup milk
cinnamon (to taste)

- melt butter in 9 x 9 pan
- mix baking powder, ½ of the sugar, flour, salt and milk.
- pour fruit in the pan with the other ½ of the sugar and cinnamon.
- pour batter over & sprinkle with additional cinnamon
- bake at 350° for ½ hour - 1 hour.

serve warm with ice cream & or cool whip.

Yummy! We like to make it with the canned peach pie filling too. It's just extra sugary!

We picked peaches too and I found a really good easy recipe:

Crush a box of vanilla wafers. Press half of the crumbs into bottom of square baking dish. Beat together 2 eggs, 1 stick butter, 1 cup sugar and spread over crumbs. Slice fresh, peeled peaches over mixture. (3-5 large peaches...however many you want.) Top with sweetened whipped cream. Sprinkle with remaining crumbs. Refrigerate.

I was a bit put off by the raw eggs, but I cannot tell you how good this concoction is! Try it and let me know...

I love peaches right now..They are my favorite for breakfast, with just a little milk and a sprinkle of sugar. If I wanted them to be even better, I'd go get some half and half or even cream...way good.
