maybe i should keep it a secret.

i recently came across a recipe for a corn & black bean salsa here. i've probably made it at least once a week for the last month or so.... we love it, & so do our friends & family. it's been devoured at all of our latest get-to-togethers. the best part? the left-overs (if there are any) last for days in the fridge.


corn & black bean salsa

1 can of black beans drained
16 oz. of corn (canned, frozen, even fresh)
1 green pepper, chopped
1 red pepper, chopped
1 cucumber (as much as you want, i used the whole thing), peeled & chopped
fresh cilantro (as much as you want), chopped
1 small bottle of kraft zesty! italian dressing

mix it all together, cover & let it chill in the fridge for about a 1/2 hour or so.
serve with chips or all by itself!

My mom makes a killer corn salsa. Always a hit. Wonder if it's the same? Can't wait to try this one.

Ohhhhhh that one is on my food site too.. under appetizers. It is so yumo. I can't make it too often because it all goes in my BELLY! With lots and lots of CHIPS!

I got this recipe from a friend at a potluck lunch. I started also adding scallions and tomatoes then substituted the Italian dressing for fresh salsa. SO yummy!

Speaking of things to crave, I'm glad to hear that I'm not the only one who craves ice during pregnancy. That is all I want. A little Dr. Pepper on top wouldn't be bad. Where do you get your crushed ice? My 2 year old also visits the ice maker throughout the day and chomps along with me.

I made it for our 'Jazz in the Park' outing last night.

Everyone loved it..
Everyone asked for the recipe.

As I was making it, my boyfriend said he'd never seen anything like that before (I had, so I knew it would be good) so I think he was a little scared. Certainly apprehensive. HE LOVED IT!!
