soup exchange

so it's official - if you haven't noticed, my absolute, all-time favorite winter meal is soup. i don't know about you but, just the thought of a big bowl of steamy soup makes me all warm inside. not to mention, soups are usually pretty quick and easy to prepare & a little can go a long way.

so after obsessing, thinking & yes, even dreaming about soup, i had an epiphany... an aha! moment you might say. i'm throwing a party & you all are invited. that's right, i'm throwing the first virtual soup exchange & i'd love you to join in the fun. (okay honestly, i really don't know if it's the first virtual soup exchange, but it makes me sound so innovative & creative, that we will just go with it.)

ready for the details? your participation is simple, totally easy & completely pain-free. all you have to do is leave a comment, email me (accordingtokelly@gmail.com), or even tweet me (@according2kelly) your absolute, all-time favorite soup recipes. (& if you have any question about it, i totally consider chili a soup.) while we're at it, nothing goes better with soup, than homemade bread &/ or rolls - so send those recipes too. &, if you've already posted any (or all) of your recipes, simply send me the link (i'm excellent with the copy & paste functions on my computer). i guess we better set a "submission" deadline, so our soup exchange doesn't go on forever... so how about friday, february 12th? once i've received the plethora of recipes i'm expecting (come on folks, better not fail me now!), i will compile them all into a download-able cookbook of sorts for all to enjoy!

woot! woot! i'm getting super-duper excited. an entire cookbook chock full of people's absolute favorite soup & bread recipes? sounds like dinner will be planned for months... hopefully my family won't start referring to me as the "soup nazi." now, run along , let's start exchanging soups.

My BFF's Mom's Cheesy Potato Soup

10-12 peeled and largely cubed potatoes
4 cups of water
4 chicken bouillon cubes
1/2 cup diced green onion
1 cup chopped carrots
1/2 cup chopped celery
1 Tbsp. parsley
1/2 tsp. garlic powder
2 Tbsp. butter or margarine
Boil until potatoes are tender (not mushy)
Then on low heat add:
12 oz. American cheese slices, you know, Kraft Singles, ha ha ha, i didn't know that is what they were, lol
6 oz. sour cream
12 oz. evaporated milk
1/2 cup "crispy" bacon pieces
Stir until cheese is melted

Yummy, yum, yum. My mom was experimenting one day and came up with this perfect comfort food. It's wildly a family, co-worker, and in-law favorite. It's been used as bribery. It's won awards at soup and chili cookoffs.

this is so delicious...i promise it is worth every bit of ingredient! and you just throw it in the slowcooker and let it do it's thing. can't get any better than that, especially for this supermom!

VEGGIE MEATBALL SOUP

25 frozen cooked italian meatballs (1/2 oz each)
1 can (28 oz.) diced tomatoes, undrained
3 c. beef broth
2 cups shredded cabbage
1 can (16 oz) kidney beans, rinsed and drained
1 medium zucchini, sliced
1 cup frsh green beans, cut (i use canned)
1 c water
2 med carrots, sliced
1 t dried basil
1/2 t minced garlic
1/4 t salt
1/8 t pepper
1/8 t dried oregano
1 cup uncooked elbow macaroni ( i get that enriched Barillo and it is so good)
1/4 c minced fresh parsley (i just throw in a T of dried)
Grated parmesan cheese, optional

In a 5 qt. slow cooker, combine the first 14 ingredients. Cover and cook on low for 5 1/2 to 6 hours or until vetgetables are almost tender.

Stir in the macaroni and parsley: cook 30 minutes longer or until macaroni is tender. . Serve with parmesan cheese if desired. 6 servings. or 2 1/2 qts

I got this from a friend and don't know where it orginated from.

Yummiest Black Bean Soup Ever!

2-15 oz. cans black beans, drain & rinsed

1-14 1/2 oz. can canned stewed tomatoes, cut up.

1-15 oz. can diced tomatoes and green chilies

1-16 oz. can chicken broth, 99% fat free

1-11 oz. can canned corn with red and green peppers

1 cup scallions

3 tbsp chili powder

2 tsp ground cumin

1 tsp minced garlic

Cooking spray for crockpot.

Spray crockpot before placing ingredients in pot. Combine all ingredients, in order, and mix lightly with wooden spoon.

Cover and cook for 4 to 5 hours, or until heated throughly.

Soup lovers unite! I love soup so much, I served it at my wedding.

This is my favorite-seems complicated, but it's not really. Definitely worth the effort. I serve it with Hush Puppies (made from a mix). Yum!

Black Bean Stew w/Creamed Corn
1 onion, chopped
2 garlic cloves, minced
1/2 -3/4 tsp. cumin (depending on your tastes)
1/4-1/2 tsp. cayenne pepper (I like it spicier)
big pinch of cinnamon
1 tbs. tomato paste
1 c. chicken broth
2 cans black beans, drained
1 Kielbasa (I use the turkey kind-less fat), cut into rounds, saute to brown it up a little
2 c. frozen sweet corn, thawed
16 oz heavy cream
4 green onions, sliced
coarse salt/pepper

Saute onion, garlic, cumin, cayenne, cinnamon in olive oil in a large saucepan. Cover and cook over medium heat until onions are soft (5 min). Add tomato paste, stir until shiny (1 min). Add broth, beans, kielbasa. Bring to simmer. Cover and cook over low at least 10 min.

Meanwhile in a medium saucepan-simmer corn in cream over med-low heat until thickened (at least 10 min). Add green onions and simmer 5 more min. Season with salt and pepper.

Ladle stew into bowls. Spoon Corn mixture on top. Serves 4

It's based off of a recipe from a cookbook. However, A friend of mine informed me recently that if you change 3 ingredients in a recipe it then becomes yours. She's a cook in the test kitchen at Southern Living so I pretty much believe her on this one.

Chicken Green Chili Stew (originally a Sunset recipe that I have tweaked)
Chicken Green Chili Stew

1 whole Chicken, cleaned
3 whole bay leaves
1 tblsp peppercorns
2 tblsp salt
1 lb frozen sweet corn
2 green bell peppers halved stemmed and seeded
4 Anaheim Chilis halved, stemmed, and seeded
4 serrano chilis halved, stemmed, and seeded
3 tblsp olive oil
2 large yellow onions chopped
2 tbslp minced garlic
2 tblsp cumin
1 tblsp coriander
2 15oz cans of hominy
2 15oz cans white beans
1 can of tomatillo salsa (like Herdez)

1 Put chicken in a pot w/bay leaves, peppercorns, and 1 tblsp salt. Add water to cover chicken by 2 inches. Bring to a boil and reduce heat and simmer 35 to 45 minutes. Remove chicken from pot and let cool. Strain broth and cool (this step can be changed to buying chicken broth and a precooked chicken to save time if you want but this way is alot cheaper).


2. While chicken is simmering,set oven to broil and broil peppers. Let cool, remove pulp from skins and set aside.

3. Heat oil in large pot over med high heat. Add onions, garlic, spices, and remaining tblsp of salt. Cook until onions are translucent. Add peppers, chilis, and corn and cook a couple minutes. Add hominy, beans, tomatillo salsa and 7 cups of broth. Bring to a boil, reduce heat and simmer 10 min.

5 Shred chicken and add to pot. Cook 10 more minutes and serve.
