tried it, loved it!


I just wanted to report that I made the cafe rio salad last week, and boy was it delicious! The recipes aren't mine... they come from the friend of a friend of a friend. But they are definitely something you should try at home... but be warned, it makes a ton of food, so invite your nearest and dearest over & have a party!

Cafe Rio Dressing & Sweet Pork
Cilantro-Lime Rice & Black Beans

Once you've made the dressing, pork, rice & beans, it's almost time to eat. But you still have to assemble the salad. Start with a tortilla (we used the disposable aluminum pie tins, but you could use a bowl), then layer on cooked beans, rice, romaine lettuce, pork, dressing, and any of your favorite toppings: pico de gallo, guacamole, tortilla strips, cheese, cilantro & lime.

pete and I make these salads all the time... we just use the beans we make and the chipotle shredded pork from our burritos... and any fresh veggies, etc we have on hand... oh is it good! except we don't make that dressing (though I love it from cafe rio!) but just squeeze lime on top--you don't even miss it and it's SO much healthier that way! fabulous!

This looks really good, but seems like a lot of work, not to mention a lot of food for just the two of us. I'll tuck this away in the memory banks for a future entertaining idea.

honestly, not as much work as it seems. I made the dressing, rice & beans the night before. I cooked the pork in the crock pot, and then just layed it all out, and people made their own. but if you want to keep it really simple, just make plain white rice, and black beans. There are enough other flavors going on with the dressing & pork. but, it does make a ton... too much for just two.

I made a similar recipe for the salad when I wasn't living near a cafe rio and had the horrible craving you can't fulfill.... buy you can only try to make it the same and hope it does...

Can I just say that you are AWESOME!! WE moved to a VERY small town in Ok. So we never get cafe rio and I have missed it like crazy. Thanks to you I can have it once again. Thank you SO MUCH for posting this!!!
