sometimes this just sounds good!

i don't know why, but this morning i woke up in the mood for macaroni & cheese. maybe it's because it's raining outside. maybe it's because it's thursday, & i've barely scratched the surface of this week's "to do" list. maybe it's because i miss my mom & i miss having someone taking care of me. whatever the reason, i'm sure the mac & cheese will cure my blues.

home-made macaroni & cheese
(it's definitely the cheesiest)

ingredients:
1 1/2 cups macaroni(this is one measurement i never pay attention to, i usually just dump the whole bag in)
1 1/2 cups of grated cheese (i just use whatever i've got on hand & i keep adding cheese until i think it's cheesy enough)
1 egg
1/2 qt. of mild
1 tsp. salt
1/2 tsp onion salt
salt & pepper to taste

directions:
cook macaroni in boiling water. once it's cooked run cold water over it. butter the sides of your bowl or casserole dish. place 1/2 the macaroni in bowl & sprinkle with 1/2 the cheese. add rest of macaroni & top with remaining cheese. (actually, i prefer to layer the macaroni & cheese, spreading the yummy goodness all over!) in a separate bowl beat the egg, milk, salt, onion salt and salt & pepper, and pour over macaroni. bake for 1 hour at 300 degrees.

Kelly, this sounds like a great recipe. And far easier and homey than most I come across. I'm gonna have to try it soon.

Can anything beat homemade mac & cheese? I just love it. I also use what cheese is on hand. But if I plan it ahead of time, I buy a little Jarlsberg to mix in with it. Just a quarter pound from the deli. Not frugal, but...it really adds an amazingly creamy yumminess. My recipe is a little different from yours, as I start with a roux, mix in evaporated milk and then add the cheese until it is gooey and melty. Oh! And I mix crushed up Ritz crackers with butter and sprinkle it on top!
I actually have some in my freezer, since the recipe makes so much. I need to take it out so we can have it for dinner next week!

mac n cheese has got to be THE best comfort food ever. Its 30 degrees here and I could really use some of that. Yum!

That sounds fantastic! I remember the first time I had homemade mac&cheese. I was in Jr High and eating dinner at a friends house and I was shocked that you could make it homemade. Needless to say my friends family looked at me like I was homeless and to this day they make fun of me. In my house if it wasn't in a box then we didn't eat.
